Last week I was getting the urge to bbq so I went to the market to see what was on special. This is how we shop for food; whatever is on sale dictates what we have for dinner for the week. Pork shoulders were a great deal at $0.98 per lb, so I bought a 8 lb and some carne asada steak. I was going to smoke the shoulder but I didn't have time. I could have gone two ways with the pork... pulled pork sandwiches or carnita tacos. Either way if you are looking for an easy way to cook pulled pork here is the way I do it without bbq or smoking it. I don't use measuring cups, but I'll do my best to provide an estimate on the ingredients.
Trim excess fat from pork shoulder. Mix the following dry rub in a small bowl and spread thoroughly over pork. You want to really rub it into the meat (sorry). Cover pork with plastic wrap and refrigerate for 24 hours.
Remove plastic wrap and place pork with marinade (recipe below) in crock pot on low setting and cook for approximately 6-8 hours depending on size of shoulder. You'll know it is done when the pork can be easy pulled apart with only a fork. Pull apart pork with two forks until you have all the pork pulled off the bone. All you need from there is corn tortillas, avocado, cilantro, salsa, and a lime. Enjoy!

Dry rub:
- 2 tbsp Paprika
- 3 tbsp Garlic Powder
- 1 tbsp Black Pepper
- 3 tbsp Kosher Salt
- 1 tbsp Chili Powder
Marinade:
- Can of beer
- 1 tbsp of peppercorns
- 2 tbsp of minced garlic
- a few bay leaves
